Hereford Prime Carcases are individually chiller assessed to ensure they meet the strict specifications laid down by Hereford Prime NZ Ltd.

The Specifications include:

• Meat Colour score 1 - 4
• Fat Colour score 1 - 4
• pH Level less than 5.7
• Marbling score 1.5 - 4
• Rib Eye Muscle Quality

These specifications are in place to ensure the highest quality eating experience. Hereford Prime Beef prides itself on producing consistency and unrivalled quality every time.

The Assessment is carried out by trained personnel, using a pH meter, Japanese colour chips and eye assessment for marbling and rib eye quality.
