Hereford Prime Carcases are individually chiller assessed to ensure they meet the strict specifications laid down by Hereford Prime NZ Ltd.

- Meat Colour score 1 - 4
- Fat Colour score 1 - 4
- pH Level less than 5.8
- Rib Eye Muscle Size
These specifications are in place to ensure the highest quality eating experience. Hereford Prime Beef prides itself on producing consistency and unrivalled quality every time.
The Assessment is carried out by trained personnel, using a pH meter, colour chips and eye assessment for marbling and rib eye quality.
Hereford Prime Suppliers are provided with feedback sheets detailing the performance of their cattle.
